DH husband and I are doing so well on our new way of looking at food. At the dinner table tonight, we were putting in our calorie count and we’re short by 500 calories for the day, can you believe that?
Tonight I made baked wild sockeye Salmon with some of my special blend of spice rub for beef, but you know, it was wonderful on the fish! I just gave it a short squirt of canola oil spray and sprinkled on a goodly amount and tossed them in the hot box.
About 10 minutes prior, I had put a half sheet pan full of Alexia Chipotle Sweet Potato fries in there and they finished up alongside the fish. OMG! SO GOOD! Look for this in the freezer case!
I found a large bag of washed and chopped Kale at the Mega-mart, so that got a quick sauté in EVOO and minced garlic and then covered the pot to steam for about 5 minutes.
LET’S EAT! This was very yummy.
