After A Long Day, Kind Of A Cheat Meal

The other day, DH took me to Costco for our quarterly stocking up day. I like to get only a few things at Costco, well, more than that, but certainly not all of our food/household shopping is done there. I compare the prices of our staple goods with other establishments, excluding any coupon deals, and I have a fairly set list. Living out here in the middle of the desert, not too much of anything is close by. We need to drive a bit to get to just about everything, so this makes for a long day and it’s best to plan it out. With this all said, by the time we get home, put everything away, it’s just about time for dinner. So I thought ahead a little more than usual. While in Costco, we got one of their rotisserie whole chickens, yum!

Now come on, can you tell me that you can make a roasted chicken at home, when you’ve been at work all day, and have it come out this good for such a great price? I dare you!

To round out our ‘cheat meal’, I made a Willcox tomato and onion salad with loads of flat leaf Italian parsley and my House-made Salad Dressing.

Alongside the chicken was fresh Zucchini and Sweet Red Bell Pepper sauté with garlic and shallots.

Kind of a cheat meal

Very delicious, easy, kinda of cheat, kind of not and GONE!

    and you can’t beat the price of the Costco rotisserie chicken plus it is a pound more than any of the grocery stores:)
