In Hawaii, we have a different name for that, but I’ll spare you.
When I poach chicken for this or that dish, I add in aromatics and spices. This makes for a wonderful broth that I may or may not use in the recipe, so why waste it.
If you have just a small amount of broth leftover, pour it into an ice cube tray and freeze solid. Pop them out and into a zip-top bag, marked of course, for later use. This is great for steaming a small pot of veggies, or making a stir fry sauce, you name it. There are several ways to utilize a tablespoon or two of broth.
